  1. Sift 1–2 tsp matcha into a cup to avoid lumps.
  2. Add 2 tbsp hot (not boiling) water and whisk until smooth and frothy.
  3. Fill a glass with ice, stir in optional syrup, and pour in 180–240 ml pistachio milk.
  4. Pour the matcha over the top, and stir before drinking.

Getting the balance right

Matcha can taste sharp or grassy on its own, so the job of the milk is to soften it. Use unsweetened pistachio milk and add sweetness yourself — a little pistachio syrup or maple — so you can dial it in. Sift the matcha and whisk it with hot, not boiling, water (around 80°C); boiling water makes matcha bitter.
